Its name comes from a bike race between the cities of Paris and Brest, hence the wheel shape cake. Paris-Brest is a ring of delicate cream puffs filled with a hazelnut buttercream/pastry cream filling (called praliné), nestled in the cream at the heart of each puff is pure praliné. Its subtle and delicate flavors will delight you.
